Monarch Dallas Welcomes New Executive Chef

Recently Chef Salisbury served as chef de cuisine at Carbone

Monarch, the renowned wood-fired modern Italian restaurant helmed by two-Michelin-starred chef Danny Grant, announced the appointment of William Salisbury as the new executive chef. 

Situated on the 49th floor of the historic National building in downtown Dallas, Monarch has become one of the city's premier dining destinations. The restaurant offers an elevated menu that blends nostalgia with Grant's sophisticated reinterpretation of his favorite childhood dishes.

“Chef Salisbury was a natural fit, and we instantly connected on our shared childhood experiences and upbringing, having both been raised in Italian families in Long Island, NY,” Grant said in an official statement. “We have a mutual understanding of Italian traditions and flavors, which created an immediate bond and trust that chef Salisbury understood the vision for the restaurant, and where we want to take it moving forward. Chef Salisbury is a remarkable chef and we are thrilled to have him as part of the team.”

Salisbury brings nearly 20 years of culinary expertise to Monarch. Originally from New England and raised in an Italian-American family in New York, his distinguished career includes time at renowned culinary destinations in Nantucket, Europe and New Orleans. Salisbury honed his skills under the mentorship of culinary legends like chef John Besh and made his mark at esteemed establishments such as Domenica and Cochon. 

In 2018, he moved to Dallas, joining chef Bruno Davaillon at Bullion as executive sous chef, where he explored his creative flair and contributed to menu development. Most recently, Salisbury served as chef de cuisine at Carbone under Major Food Group. Salisbury’s Monarch journey will allow him to combine his extensive culinary background and deep passion for Italian cuisine.
