This fall, The Colony, Texas, will welcome JĀKÖ Cocina Y Agave, a new dining destination at Grandscape’s Grotto. Opening Oct. 31, 2024, the restaurant will offer a mix of authentic Mexican cuisine and creative cocktails, with a setting that transforms from an upscale dinner atmosphere to a lively late-night lounge.
Occupying 6,800 square feet, with an additional 1,700-square-foot patio overlooking The Grotto, JĀKÖ’s design reflects a blend of Aztec culture and contemporary style. The space will feature live music, making it an ideal destination for both dinner and nightlife.
Leading JĀKÖ as general manager is Enrique Jurado, whose extensive experience includes managing top-rated New York venues like Lupa Osteria Romana, Bar Verde and Giorgio’s of Gramercy. Jurado’s leadership is expected to bring a high level of hospitality to the restaurant, drawing on his successful background in the competitive New York dining scene.
The culinary program, led by Executive Chef José Caballero, will showcase a modern take on Mexican cuisine. Chef Caballero, trained in Spain under Michelin-starred chefs, will offer a menu that pairs traditional dishes like birria and enchiladas with innovative presentations. Highlights include the “Campechana de Mariscos,” served in a frozen molcajete with liquid nitrogen, and langoustines cooked tableside using a salt crust technique.
The cocktail menu is equally inventive, featuring tequila- and mezcal-based drinks with a focus on unique flavors and presentation. Guests can enjoy a variety of margaritas, including the signature “Elegancía Mexicana,” which merges the traditional margarita with martini sophistication. Other crowd favorites, such as Ranch Water and Espresso Martinis, will also be on offer.
A collaboration between 3ntourage Hospitality and Wonderland Hospitality, JĀKÖ is designed to deliver both culinary excellence and vibrant entertainment. 3ntourage has worked with notable brands like Virgin Hotels and Montage Hotels & Resorts, while Wonderland Hospitality is known for venues such as Snowbird Cocktail Lounge & Kitchen and Tipsy Alchemist Austin.
JĀKÖ Cocina Y Agave will be open weekdays from 4 p.m. to 10 p.m. and weekends from 4 p.m. to 1 a.m. It is located at 5754 Grandscape Blvd, Suite 110, below Thirsty Lion in The Grotto at Grandscape.
