The Ice House at the PGA District in Frisco, Texas, known for its exceptional barbecue, is expanding its capacity to meet growing demand.
As part of the Omni PGA Frisco Resort, the popular eatery is installing a new smoker in the coming weeks. Pitmaster Rick Adamo, with over 30 years of experience, will be joining the restaurant and will oversee the installation and firing of the restaurant’s new smoker.
According to an official statement, the new Southern Pride SPK 1400 smoker, towering at 7 feet and spanning 6 feet in width, will replace the current smoker, affectionately called Lucille. This upgrade will nearly double the restaurant’s capacity, allowing it to smoke up to 60 briskets or 180 chickens simultaneously.
Ice House is known for its meticulous smoking process, slow-cooking certified angus beef briskets over post oak for 10 to 12 hours, and preparing its chickens with a detailed beer-brining and air-drying procedure. The restaurant also serves its meats with three homemade barbecue sauces and prepares over 50 pounds of pickles weekly.
The new smoker is expected to be operational by Sept. 1, with plans to involve guests in naming it.
Since opening in May 2023, the Omni PGA Frisco Resort quickly became a top destination, offering luxurious amenities and experiences, including two championship golf courses and a variety of dining options. Chef Michael Stewart, with over 25 years of culinary experience, leads the culinary team with a focus on quality and authenticity. Stewart’s commitment extends beyond the Ice House, with beef trimmings from the briskets being repurposed at Ryder Cup Grille for its Texas chili.
