Eledi Is One Of This Year’s Most Anticipated Restaurants

Chef Anastacia Quiñones-Pittman, Victor Rojas and Carlos Marquez team up for a project built on friendship and tradition

Three of Dallas’ top culinary and hospitality veterans are teaming up for a fresh new concept: Eledi. 

Set to debut later this year, the restaurant will be the first project from chef Anastacia Quiñones-Pittman, hospitality veteran Victor Rojas, and beverage director Carlos Marquez under their newly formed Oh Hi Hospitality group.

Located in the heart of Dallas at a soon-to-be-announced site, Eledi will celebrate the trio’s decades of experience and shared vision for creating a space rooted in tradition, family, and community.

A New Chapter

For chef Quiñones-Pittman, Eledi marks a major milestone. After seven years leading the kitchen at José, she steps into her first ownership role, bringing a culinary style shaped by her Mexican-American heritage and extensive background in live-fire cooking.

“I am thrilled to launch Eledi with my longtime friends and partners,” said Quiñones-Pittman in an official statement. “The concept reflects our passion for culinary and hospitality excellence and our belief that the best restaurants are rooted in tradition, family, community and cooking with heritage.”

Quiñones-Pittman’s menu will stay true to her signature approach: building bold flavors while allowing the cuisine to evolve beyond any one label. Live-fire cooking will serve as a central focus of the restaurant’s kitchen.

Friends First, Partners Now

Victor Rojas, Eledi’s director of operations, and Carlos Marquez, beverage director, share long histories with chef Quiñones-Pittman, both personally and professionally.

Rojas brings nearly 40 years of experience leading some of Dallas’ most celebrated restaurants, including Bullion, The French Room and multiple Stephan Pyles concepts. Most recently, he served alongside Quiñones-Pittman at José, where the restaurant was a semifinalist for the James Beard Award for Outstanding Hospitality.

Marquez, a Mexico City native and veteran of Dallas’ Victor Tangos, spent years crafting innovative beverage programs. At José, he helped build a cocktail and spirits menu known for its creativity and extensive agave selections.

Together, the trio plans to create a space that feels welcoming for both guests and staff. “We hope to create a place that is as warm and inviting as having family dinner at home,” said Rojas in the statement.

Family, Fire and a Fresh Take

The name Eledi is a personal nod: a blend of the names of Quiñones-Pittman’s mother, Elena, and her husband’s mother, Diana. It symbolizes the restaurant’s deep ties to tradition and family.

Although the full menu remains under wraps, guests can expect dishes that honor Mexican culinary roots while embracing new flavors and techniques.

“With Eledi, I am focused on developing a culinary program and style that transcends boundaries,” says Quiñones-Pittman. “My background and passions are anchored in Mexican techniques and flavors, my goal is to avoid being defined by one genre. My approach is to stay true to the spirit of the cuisine while allowing it to grow and evolve, letting every dish be shaped by the people who cook it and the communities that enjoy it.”

Live-fire techniques will play a major role in the kitchen, offering a sensory-driven dining experience that harks back to early inspirations from Quiñones-Pittman’s childhood.

A Proven Track Record

The three partners bring a wealth of accolades:

  • Quiñones-Pittman is a three-time James Beard Award semifinalist for Best Chef Texas and was named Chef of the Year by Eater Dallas in 2018. She also appeared on Netflix’s “Taco Chronicles” in 2022.
     
  • Rojas has led multiple award-winning fine dining establishments and helped José achieve national recognition.
     
  • Marquez has established a reputation for creative beverage programs rooted in authenticity and flavor innovation.

Their combined experiences aim to deliver a dining experience that feels personal yet polished, traditional yet forward-thinking.
