Sushi | Bar Dallas To Host Exclusive IWA 5 Sake Pairing Experience

Embark on a culinary journey featuring a 17-course omakase by Chef Rico Bordayo

Sushi | Bar Dallas invites sake enthusiasts to an exclusive IWA 5 pairing experience on Thursday, Oct. 10, with two seatings available at 5:30 p.m. and 7:45 p.m. 

This unique event features a 17-course omakase crafted by chef Rico Bordayo, paired with a selection of IWA 5 Assemblage releases from the 2019, 2020, 2021 and 2022 vintages, curated by IWA Sommelier Brenton Blanchard.

IWA 5, founded by Richard Geoffroy, the esteemed fifth Chef de Cave of Dom Pérignon, represents a new era in sake production. After nearly three decades of crafting one of the world's most iconic champagnes, Geoffroy turned his focus to sake brewing. His passion for Japanese culture and a desire to make a meaningful contribution to the country inspired this transition. Utilizing winemaking techniques, he blends 20 different sakes and ages them in bottles, releasing one Assemblage each year. The result is a complex and versatile sake that pairs beautifully with various cuisines.

Tickets for the event are $295 per person and can be purchased here. Due to its exclusive nature, space is extremely limited.
