After more than 10 years of redefining the Dallas steakhouse scene, chef John Tesar’s Knife is preparing for a new evolution. As of March 28, 2025, the restaurant will close its doors at The Highland Dallas and transition to a new, carefully selected location that aligns with Tesar’s long-term vision.
The Plano location, called Knife Steakhouse, will remain open at 6121 W Park Blvd RS9.
This move marks the end of a partnership between The Highland Dallas, Curio Collection by Hilton and chef Tesar’s acclaimed Knife concept. "We are grateful for chef Tesar’s partnership over the years and we wish him success in his future endeavors," said Lennox Capital Partners, which owns The Highland Dallas.
Looking Ahead
John Tesar Concepts, in collaboration with GBOD Hospitality Group and 3ntourage Hospitality Group, identified a premier Dallas location that will house an expanded iteration of the Knife brand. This next chapter will feature Knife alongside the more intimate and experiential Pocket Knife, as well as a brand-new social concept called Switchblade — all under one roof. Further details about this venture will be announced in the coming months.
As more details emerge, one thing is certain — Tesar’s passion for bold flavors and top-tier ingredients will remain at the heart of this new venture.
Knife’s Former Plans

In October 2024, Knife Steakhouse at The Highland Dallas announced a transformation into Knife Steak & Seafood, which was set to debut in January 2025. This reinvention was designed to introduce a more approachable version of Tesar’s Michelin-starred Knife & Spoon at The Ritz Carlton Orlando, Grande Lakes.
While maintaining its signature dry-aged steak program, the restaurant also planned to incorporate a selection of seafood dishes inspired by Tesar’s successes in both Orlando and his previous Dallas venture, Spoon Bar & Kitchen. The goal was to create an elevated yet accessible dining experience tailored to the Dallas market.
Where To Find Knife In The Meantime
Although the Highland location will be closing, fans of Knife’s celebrated steaks and innovative cuisine need not worry. The Plano location will continue operating as Knife Steakhouse, ensuring Dallas-area diners can still enjoy the restaurant’s signature flavors.
Additionally, those looking for an Italian twist on Tesar’s legendary dry-aged steaks can visit Knife Italian Steak at The Ritz Dallas, Las Colinas, which combines the chef’s expertise in steak with Italian-inspired culinary influences.
