Dallas Chef Is A World Food Champion For Vegetarian Cooking

The award earned him a coveted spot at the WFC Final Table in Bentonville, Arkansas

North Texas is home to a vibrant culinary scene, with many chefs earning prestigious James Beard awards and Michelin recognition. But for me, the fancy titles and awards aren’t always as important as finding something I — as someone who does not eat meat — can enjoy. 

Enter Senior Sous Chef Ricardo Viesca Gutierrez of Sheraton Dallas Hotel, who recently claimed victory in the vegetarian division at the 2024 World Food Championships (WFC). Competing against over 300 teams from more than 35 states and 20 countries, chef Ricardo earned a spot as one of the 12 finalists across 12 categories. 

What's The World Food Championships?

Since 2012, the WFC has become a global culinary phenomenon, inspiring live and TV shows, creating 10,000-plus dishes and partnering with U.S. food charities. It pioneered "food sport" with fair judging, TV exposure and a unique competitive platform for chefs.

The Winning Dish

The winning dish, smoked vodka sauce, is a true Texas tribute, using Tito’s Vodka — a proud local brand — as its base. To capture the essence of Texas barbecue, chef Ricardo smokes the tomatoes in the Sheraton's industrial-sized smoker, infusing the dish with rich, smoky flavors.

“I draw inspiration from my Mexican heritage, travels and home to create beautiful, delicious comfort food that brings joy,” chef Ricardo said in an official statement. “I love eating good food and know what I want to see on a restaurant’s menu as a consumer.” Born in Mexico City, chef Ricardo pursued his culinary education in Mexico and Spain, refining his skills in luxury hotels and Michelin-starred restaurants across the U.S. and beyond. 

You can savor the Smoked Vodka Sauce in the Pappardelle Allá Vodka, now available at Open Palette in the Sheraton Dallas Hotel, located at 400 Olive St, Dallas.

For chef Ricardo, joining this year’s competition was a no-brainer. After competing at last year’s WFC in Dallas, he gained the experience and confidence needed to bring home the trophy from Indianapolis this past November. 

Up Next: The Finals

The award not only secured him the title but also earned him a coveted spot at the finals in Bentonville, Arkansas, this March. There, he’ll face off against fellow category champions for the ultimate culinary showdown.

TLC Vegan Cafe: If you were wondering what the “TLC” in TLC Vegan Cafe stands for, it is a clever initialing for Tastes Like Chicken, and several of chef Troy Gardner’s entrees reinforce the name. Everything here is great — so great, even the meat eaters will enjoy it. Located at: 1930 N Coit Rd #140, Richardson.
