On Sept. 19, Al Biernat’s North will host an exclusive wine dinner to honor Andre Tchelistcheff, ‘The Maestro,’ acclaimed as “the most influential person responsible for California producing world-class wine.”
Held at Al Biernat’s North, 5251 Spring Valley Road, Dallas, the evening will begin with a reception at 6:30 p.m., followed by dinner at 7 p.m. Guests will enjoy a luxurious four-course meal crafted by Executive Chef Luis Rodriguez, with each course paired with selections from Tchelistcheff’s celebrated wines.
The menu includes:
- Reception: Passed hors d'oeuvres paired with a 2021 Marchelle brut made from vines planted in 1902.
- First Course: Fried tomato with serrano, mango and Brussels sprouts, paired with a 2021 Marchelle ‘Lorenzo Vineyard’ chardonnay.
- Second Course: Pan-seared sea scallop with pea puree, paired with a 2021 Marchelle ‘Van Der Kamp Vineyard’ pinot noir.
- Third Course: A trio of wild game, including bourbon-cured elk lollipop, venison filet and bacon-wrapped quail leg, paired with either a 2019 Beaulieu Vineyards 'Georges De Latour Reserve’ cabernet sauvignon or a 2019 Ornellaia.
- Fourth Course: A selection of cheese, nuts and fruits paired with a 2019 Quilceda Creek cabernet.
The evening will also feature insights from Greg Lafollette, Tchelistcheff’s last official student and close friend of Brian Hardin, Al Biernat’s sommelier, who will join via Zoom to discuss Tchelistcheff’s impact on the wine world.
