First Look: The Wilfred, Plano's First Speakeasy

With all the speakeasies around North Texas, you'd think that Plano would have already had one. You'd think. But you'd be wrong. 

"The Wilfred has been a dream of mine for many years, and I am extremely proud and grateful for what we’ve been able to create in our space," Chef Ryan Oruch, co-owner of the neighboring Sea Breeze Fish Market & Grill, tells Local Profile. "I hope to share this experience with as many people as possible!"

The speakeasy is right next to Sea Breeze, with a number pad hinting at what spirited mixes await. "I think the thing that makes our speakeasy unique is the fact that we’re tucked in the back of a long-standing shopping center, not in a 'cool' or trendy part of town," says Oruch. 

While Sea Breeze is — and rightly so — known for its excellent seafood, Oruch hoped to expand his family's legacy. His love of craft cocktails (as well as his affection for his dog, Wilfred, the bar's namesake) are quickly evident. 

"I started bartending when I was 20 and I lied my way behind a bar by saying I had lots of experience," he says. "I was fortunate to work with some very talented people who showed me the ropes. I picked things up quickly, and the rest was history."

During Local Profile's visit, an aviation (gin, Luxardo Maraschino, creme de violette and lemon), bubblz & berriez (strawberry-infused vodka, lemon, honey and Prosecco), B.Y.O.G.N.T. (Roku gin, Mediterranean tonic, with a choice of two: cucumber, mint, rosemary, basil, clove and berries) and a manhattan. 

I always judge bartenders on manhattans: it's a straightforward, classic cocktail that is a fair mixology barometer. Here at The Wilfred, I was served one of the best manhattans I’ve had in Collin County.

What's interesting about The Wilfred is that Oruch isn't content on simply serving seafood — and he totally could, and people would be fine with that, because Sea Breeze is great. But! The menu is different, and Chef Oruch created dishes that go well with the drinks and give The Wilfred it's own identity. 

"Our goal was to create a fun and safe space that is welcome to all," says Oruch. "We want everyone to come to hang out and enjoy the energy and vibe Plano hasn’t seen before."
