In an effort to support families affected by the devastating wildfires in West Texas, III Forks will host Panhandle to Table, a wine and spirits dinner, on Aug. 22, 2024. Each $500 ticket includes a $400 donation to Panhandle Proud, a charity aiding those impacted by the spring 2024 wildfires.
Curtis Osmond, president of III Forks, and chef Chris Vogeli will host the dinner. They will be joined by Dan Garrison of Garrison Brothers, Chris Brundrett of William Chris Vineyards and Texas Rep. Ken King, whose district includes parts of the Texas Panhandle.
The Panhandle to Table menu features local meats and produce. The dinner begins with a smoked quail rillette amuse-bouche, paired with a 2023 Petillant Naturel Rosé and Garrison Brothers Honey Dew Whiskey Sour.
The appetizer includes pan-seared gulf shrimp with corn and poblano puree, accompanied by a 2023 Roussanne from Texas High Plains. A baby arugula and heirloom tomato salad with Texas goat cheese mousse and pecan vinaigrette serves as the third course, complemented by a lightly chilled 2021 Moonlight Blend.
The main course offers a certified angus beef ribeye with jalapeño bearnaise, truffle-infused potato puree and seasonal vegetables, paired with a 2021 Cabernet Sauvignon from Newsom and a 2020 Mourvèdre from La Pradera. The dinner concludes with a lavender-infused Texas peach tart with honey-thyme ice cream paired with a 2023 sauvignon blanc from Dell Valley.

The wildfires, which erupted in the spring of 2024, ravaged 1.5 million acres, destroyed over 350 homes and ranches and killed more than 15,000 cattle. The disaster claimed two lives and inflicted financial losses exceeding $1 billion, including $123 million in agricultural damages and $35 million in residential property losses. In response to this tragedy, Panhandle Proud was established to provide financial support and raise awareness for the affected communities.
