Carbone Dallas Features Exclusive Dishes With Tomato-Focused Menu

Carbone Dallas — the renowned Italian-American restaurant by Mario Carbone, Rich Torrisi and Jeff Zalaznick — is introducing its first seasonal menu, inspired by the freshest tomatoes available only through the end of August. 

The menu by Carbone features two new exclusive dishes: veal milanese and scallops riserva, offering guests a chance to explore lighter fare on the celebrated menu. Each dish captures the essence of the season, showcasing Chef Carbone’s blend of traditional and contemporary culinary artistry.

The veal milanese is a pan fried 14 oz veal chop served with a vibrant salad of peak-season heirloom tomatoes, peppery arugula and basil, lightly dressed with lemon juice and Sicilian olive oil. The scallops riserva is served with house made couscous and avibrant tomato sauce made from Sungold Heirloom Cherry Tomatoes, garnished with a fresh herb salad and thinly shaved fennel. 

But tomatoes are the true star of the new menu with three additional dishes. “This is the most important ingredient,” Carbone said in an official statement.   

The Carbone Celebration of Tomatoes menu features a variety of dishes highlighting the season's freshest tomatoes. The caprese salad includes heirloom tomatoes from Eckerton Hill Farms in Pennsylvania — large, medium, cherry and demi-sec — paired with house-made salsa verde (parsley, mint, garlic, capers, EVOO, red wine vinegar), hand-pulled mozzarella and basil, finished with vinegar and salt. 

The spaghetti pomodoro features setaro pasta from Naples, Italy, tossed with fresh cherry tomatoes, Sungold tomatoes, sliced garlic, parmesan and garnished with fresh basil. Lastly, the lasagna verde boasts house-made pasta layered twelve times with tomato sauce made from fresh demi-sec tomatoes, roasted red peppers, broccoli rabe bechamel, basil pesto and mozzarella.

Carbone opened in March 2022 to much acclaim, winning over patrons with its celebrated dishes like spicy rigatoni vodka, seafood salad, linguini vongole, lobster fra diavola, chicken scarpariello and veal parmesan. Situated in the Design District, the restaurant has reached new heights as one of the most iconic restaurants in North Texas.
