On Thursday, Sept. 19, Le Meridien Dallas, The Stoneleigh will host an exclusive wine dinner featuring a four-course meal curated by Executive Chef Esayas Estifanos, paired with selections from Black Stallion Estate Winery. This event, perfect for food and wine enthusiasts, will be led by WSET Level II-certified guest speaker Ashley Austin.
The dinner will begin with an amuse-bouche of strawberry goat cheese, roasted pistachio, fresh thyme and truffle honey drizzle, paired with Stoneleigh Marlborough sauvignon blanc. The first course features a duet of diver scallops with sauce choron, blood orange and fennel, alongside ancho butter prawns with grilled shishito peppers and crostini. These dishes will be complemented by Black Stallion North Coast chardonnay and Napa chardonnay.
The entrée will be a double bone frenched veal chop served with chorizo gnocchi and tarragon beurre monté, paired with Black Stallion's 'Limited Release' red blend and cabernet. The meal will conclude with a decadent chocolate espresso cake with raspberry crème fraîche, accompanied by Black Stallion Los Carneros pinot noir.
