Knife Italian, the newest culinary endeavor led by the famed chef and restaurateur, John Tesar, will debut at the newly renovated The Ritz-Carlton Dallas, Las Colinas on March 19, 2024.
“With Knife Italian, we have the incredible opportunity to build upon what we've created at Knife and Knife & Spoon and elevate it to new heights," Chef Tesar said in an official statement. “Throughout the menu is an undertone of localism, celebrating local ranchers and purveyors and showcasing our dedication to sourcing the finest, freshest ingredients.”
Upon entering the restaurant, guests are welcomed vibrant atmosphere featuring original artwork by Thomas Schoos. They're then invited to choose between the pink champagne bar, offering an intimate yet dynamic setting with psychedelic décor, and the main dining rooms.
Further into the dining space, a fully exposed kitchen features a barbecue and pizza oven. Beyond lies a spacious wine cellar, providing an elegant backdrop for private dining experiences.
The culinary journey at Knife Italian kicks off with an array of crudi options showcasing options such as, yellowtail paired with Texas grapefruit and roasted beets; kingfish with mussel broth and caviar; king salmon with avocado, green apple and nduja; and Maine lobster with blood orange and mint. A selection of Passmore caviar crafted exclusively for Knife Italian will also be available to guests.
True to Chef Tesar's style, Knife Italian places a spotlight on its steak and meat offerings. Featuring prime 44 Farms beef, the menu showcases Chef Tesar’s expertise in dry-aging, with steaks aged on-site for 45 to 240 days. The bistecca a la Las Colinas is a menu standout — paying homage to the beloved Italian dish bistecca alla Fiorentina. This centerpiece of the meal presents a 48-ounce 44 Farms dry-aged porterhouse carved tableside, promising a memorable dining experience.
Handcrafted daily, the house-made pastas offer delightful companions to any dish, with standout choices like squid ink bucatini with Mediterranean mussels in spicy marinara; lobster agnolotti with lemon monte, lobster coral and butter-poached lobster; and goat cheese mezzaluna paired with orange and fennel.
A variety of pizzas provide the ideal shared option for the table. Chef Tesar adds his unique twist to classic recipes, utilizing a Neapolitan-style dough. Guests can expect inventive creations like the Margherita, white clam, potato with truffle and duck egg, lobster, meatball and Italian sausage pizzas.
Knife Italian will also be open for breakfast and lunch, available seven days a week. Breakfast is served from 6:30 a.m. to 11 a.m., lunch from 11 a.m. to 2 p.m. and dinner from 5 p.m. to 10 p.m.
