If you haven’t been to Wow! Donuts and Drips for a pick-me-up and a ridiculously decadent donut, you haven’t lived.

There’s nothing quite like a steaming cup of coffee and a donut on the side for dunking.

In the past, most donut shops opened in the early hours of the morning and closed before 3 in the afternoon. They were sugary havens for early birds on their way to work. Wow! Donuts and Drips is part of the new breed of donut shops that have begun to crop up, serving specialty, boutique donuts. It isn’t so much a donut shop as a coffeeshop that sells donut-based dessert alongside futuristic coffee and loose leaf tea.

Layered in downtown McKinney does indeed have layers

The bright interior centers around the long curved counter with glass panels that show off the array of donuts ranging from regular, to fancy, to gourmet, to boutique. The further you walk into Wow, the crazier the donuts get. While most places that feature donuts this elaborate–Hurts Donut for example–favor sturdier cake donuts, Wow seems to prefer raised (yeast) donuts, which are lighter, flakier and more delicate. (Are raised donuts or cake donuts better? Opinions diverge. Personally, I prefer raised. But that’s neither here nor there.)

Walking down the counter, guests first come across the classic donuts, simple, humble pastries like cinnamon roll, old fashioned, glazed, even a sausage roll or two. The next display holds the fancy donuts, a little more expensive, which introduce sprinkles, creams, even whole candy bars. Suddenly, Andes Mints are in play. Another sports a crown of crumbled Butterfingers. A powdered sugar donut hugs a blueberry cream center.

Then there’s gourmet, pricier still. The Over the Rainbow donut has blue icing and a candied rainbow. Flavors like Black Forest, Cherry Limeade and Nutella KitKat are among the most popular flavors on offer, balancing flash and substance.

Finally: Boutique donuts finish off the line, intricate masterpieces that challenge the notion of what a donut can be. Check out the green layers on Matcha Matcha, the bacon-studded Elvis, or Honey Lavender’s generous petals. Or there’s the Beauty, a glazed donut filled with Nutella, topped with cream and a strawberry carved into a rose, and the Beast (Death by Chocolate shavings).

These aren’t morning donuts to be grabbed on the way to work. If you bring these to an early morning meeting at the office, you aren’t bringing them simply to feed your coworkers, but to defeat your coworkers. Don’t say you weren’t warned.

Oh, and you’ll need a caffeine boost. Their coffees and teas are brewed with a custom machine call the Steampunk, made by Alpha Dominche, a machine that has been meticulously engineered to filter out as many impurities as possible. They call it “a reimagining of a siphon-style brewer, which maintains steam-heated water in contact with grounds in a top chamber, then extracts the mix through a filter by drawing the water into a second chamber below using a vacuum of air.” Simple.
