The cocktail that caught my attention is the Drunken Mule from Roy’s, a restaurant of European techniques and Pacific Rim cuisine. The first Roy’s opened in Honolulu, Hawaii, which is where inspiration for the Drunken Mule came from. The traditional Moscow Mule is a favorite alcoholic beverage for many over the age of 21 and typically includes a high-quality vodka, spicy ginger beer, and lime juice, garnished with a lime. Roy’s Drunken Mule is made up of the same basic ingredients with a couple twists: a blend of Pau Maui Vodka with muddled Hawaiian martini pineapples, orgeat syrup and ginger beer, served in a classic copper mug. Garnished with a lime and pineapple, this cocktail is sure to transport anyone straight to the islands.

The Drunken Mule pairs well with Roy’s new limited-time (ends in April) winter prix fixe menu at only $36.95, which features the rich flavors of winter’s harvest including seasonal produce like clementine oranges, parsnip, beets, fennel and more. To start, enjoy Crunchy Filet Mignon Dumplings or a Clementine Baby Beet Salad. As an entrée, choose between a Grilled Pork Porterhouse with fennel and parsnip or Seared Salmon with fingerling potatoes and long beans.
