Makes 4 servings.
- 1 lb. fresh asparagus
- ¼ cup good-quality balsamic vinegar
- ¼ cup extra-virgin olive oil
- 1 tsp. each salt & pepper
- 2 Tbsp. minced garlic
- Preheat oven to 400°. Break off woody ends of the asparagus stalks, discarding the woody ends.
- Mix together the vinegar, oil, salt, pepper, and garlic. Toss the asparagus in the vinegar mixture and place on a baking sheet. Roast in the oven for 18 minutes.
