  • 1 lb. fresh asparagus
  • ¼ cup good-quality balsamic vinegar
  • ¼ cup extra-virgin olive oil
  • 1 tsp. each salt & pepper
  • 2 Tbsp. minced garlic


  1. Preheat oven to 400°. Break off woody ends of the asparagus stalks, discarding the woody ends.
  2. Mix together the vinegar, oil, salt, pepper, and garlic. Toss the asparagus in the vinegar mixture and place on a baking sheet. Roast in the oven for 18 minutes.
